Baked Chicken and Rice



4 Boneless skinless chicken breast
1 Chopped green bell pepper
1 Medium chopped white onion
2 Tbsp olive oil
2 Crushed garlic cloves
Tomatoes (do not drain)
1 Tbsp sugar
Cayenne pepper
2/3 Cup basmati rice
Salt and pepper
1/2 White wine (Gewurztraminer is preferred)
1800 Ml can of diced
1 Finely diced chilli pepper
1/2 Cup diced white mushrooms

How to make it:

1. In a Large pan cook the onions, Chilli pepper, garlic, mushrooms, and bell peppers until veggies are tender.

2. Add the can of diced tomatoes with the juice, salt and pepper, Cayenne, oregano, and white wine.

3. Allow the mixture to come to a slow boil and add uncooked rice.  Turn the heat to medium and allow to cook until the rice is cooked.  Stir frequently and pre-heat oven to 350 degrees.

4. Once the rice mixture is done pour into casserole dish and place chicken breasts on top and sprinkle the dish with paprika, salt and pepper.

5. Allow to bake uncovered for about 30-45 mins or until the chicken is thoroughly cooked.
