Honey Dijon Stir fry



3 Cubed chicken breasts
1 Lrg Carrot (Sliced)
1 Celery stalk (Sliced)
1 Red Pepper (Diced)
1 Medium onion (Diced)
1 Cup sliced mushrooms
1 Chili Pepper (Sliced)
1 Garlic Clove (Minced)
1 Head of Broccoli
1 tsp. Cayenne Pepper
1 tsp. Paprika
1 tsp. Basil
1 tsp. Marjoram
Salt and Pepper
½ Cup dry sherry
3 Tbsp. Dijon Mustard
4 Tbsp. Honey
2 Tbsp. Sesame Oil

How to make it:

1) Heat the oil in a large pan or wok until shimmering. Add your chili pepper and garlic and let it sizzle for a moment. Add in the onion and cook until tender.

2) Add in the chicken breast and let cook for a few minutes; add the Sherry and the remaining veggies excluding the broccoli. Add in the spices and salt and pep to taste. Cover and let steam for 5 minutes.

3) After the veggies have had time to steam and release some juices, add in the Dijon and honey. You may have to add a little more/less of either to your desired taste.

4) Let the dish cook away and let the sauce reduce. It will gain in thickness. Add in the broccoli about 5 minutes before the dish is done. You want it a little crisp.

5) Serve over basmati rice and enjoy.
